Zucchini Pesto ‘Noodles’ with Organic Falafels


  • 3 organic zucchinis
  • 1 packet of Bite Me Fine Foods Vegetarian Falafels
  • 18-20 fresh basil leaves
  • 2 handfuls rocket
  • 1 tbs crushed pistachio nuts
  • Fresh lime juice
  • 4 tbs olive oil
  • 1⁄2 clove of garlic
  • 1 spring onion, sliced
  • 1 tbs nut butter (almond butter is a good option)
  • Handful of cherry tomatoes, halved


Use a julienne peeler or vegetable spiralizer to make zucchini noodles by putting noodles through spiralling process.

In a high power blender, combine basil, rocket, pistachio nuts, lime juice, spring onion, nut butter, garlic and olive oil. Blend mixture until well combined.

In a large bowl, toss pesto mixture over raw zucchini spirals.

Alternatively, enjoy zucchini pesto noodles cooked by adding the noodles to a skillet and sauté them over a medium heat for 1-2 minutes.

Heat falafels in a sandwich press or on the stove top for 1 minute and serve on top of cooked zucchini noodles. Garnish with cherry tomatoes, extra pistachios and rocket.
